RECIPES (Vegetables) From: "Zucchini Crazy" Summary: Multiple goodies from one of our most versatile vegetables. Date: October 3, 1997 |

| Hi,
I'm one of those crazy people who love zucchini; and, why
not? It's one of the easiest vegetables to grow, is very
prolific, and is low in calories, high in fiber, and has
great versatility. Tell me how many other vegetables you can make into apple pie, bread, cake, brownies, fruit jam, pineapple, any kind of pickle, relish, ice cream, potato chips, pan rolls, and cole slaw -- besides all the usual vegetable uses in soups, casseroles, etc. Each year, I love collecting and developing new recipes & uses for zucchini. Zucchini Bread 3 eggs Directions: Mix all ingredients, except zucchini. Add zucchini. Pour into greased bread loaf pans. Bake at 325°F for 1 hour. Zucchini Cinnamon Rings Peel, core, and cut into rings enough zucchini to make 2 gallons. Mix 1 cup lime and 3 qt. water. Soak rings in this solution for 24 hours. Drain, wash, and soak the rings for 3 hours in plain, cold water. Mix:
Simmer rings in this mix for 2 hours. Drain. Make syrup: Bring to a boil. Pour over drained rings. Let soak. Drain and reheat syrup for 3 mornings. On the third morning, add 1 tsp. pickling salt. Pack and seal in jars. Mock Fruit Jam Peel and grind (or blend) zucchini to make 2 cups worth. Add 1/2 cup lemon juice. Boil 1/2 hour. Take off heat and add: 3 cups sugar Stir till dissolved.
